Mystery Shoppers are people hired by companies to shop at their stores or restaurants and report back on the quality of the service or other such information.
Companies use this information to improve their business. Almost all companies go thought Shopping Services to find shoppers.
Generally we suggest signing up with as many as you can if you plan on doing this for a living.
There is also now a professional association for Mystery Shoppers.

If you are asked, for example, to report on how clean the bathrooms are in a fast food place, DO NOT talk about the rude cashier or the bad food, just report on the bathrooms as clearly as you can.
Don't go off into areas that you are not asked about. More then half the new Mystery Shoppers do this and are rarely given more assignments unless there is no one else to do them.
Also write clearly, and neatly. And don't try and sound too professional.
Don't use words that you normally would not use in everyday conversations.
Once a company finds someone that they like, that person will placed high on there 'list'. Even on top of workers with years of assignments behind them.

The best tip to making it as a shopper is to apply with as many companies as possible.
Get on their list even if they don't have any assignments right now. If they have your information, some ask for car insurance, etc, then your more likely to be called on.
